I have been invited to buy a OnePlus X, but I just read it doesn't support the main LTE band for AT&T of which I am a wireless customer.
Can this be updated by OnePlus via software, or should I just avoid the phone altogether?

It works fine on LTE. AT&T uses more than one fucking band, you'll just get worse coverage than you could be getting if you had full band support.
