Windows Server 2012 R2 (Windows 8.1-ter)
Windows 10 LTSB N (10 w/o Metro apps, Cortana, Edge, WMP and so on, but needs to be un-telemetrized)

the windows servers just have UI features and desktop components (e.g. windows media player) removed. they still use the NT kernel and run everything like normal. They're not intended for desktop use

Embedded is a componentised version so you can select the parts you want, useful for ATMs, kiosks, point of sale machines, etc. You either install it through the runtime or create an answer file with the components. Technically you can select all components and it is a rebranded windows desktop (e.g. windows embedded std 7 > windows 7 pro)

Not much point in either for desktop use. Just use 7.

My years of helpdesk support in my past life tell me that sometimes people need the obvious stated to them.

There's no reason to run windows servers on the desktop at all.
