I get to the last step (changing the .cfg file, telling the syslinux bootloader to locate my root partition sda1 instead of sda3), exit, reboot. Instead of the appropriate menu, I'm sent back to the install prompt, where I have to write everything all over again.

have you tried fixing the syslinux thing when it reboots, or using another bootloader like grub? grub2 is pretty much the standard for booting into linux these days and its installation is simple and good

yesterday some anon posted about "arch anywhere". it is basically an iso with an installer script
just tested it this afternoon and everything went better than expected. i don't have any problem installing this manually, but wanted to test it. it basically install arch barebones and even gives you the option to do an offline install, which might save you some time.

Did you try to remove the iso from the VM?
Well, I installed grub os-prober as well as efibootmgr, but I'm invariably met with this dialog: "warning: this GPT partition label contains no BIOS Boot Partition; embedding won't be possible. GRUB can only be installed in this setup by using blocklists; blocklists are unreliable and their use is discouraged."
If I can't solve this, my next step is to just scrap this method and shift to Arch Anywhere like anon mentioned.

You literally just partition your HDD, mount it into the live cd, chroot in, set some settings, install the main system and then your bootloader.
