Personally, I'm having issues with Transmission. It doesn't want to move completed torrents. Is it a problem with SickRAGE?
Oh, and I can't find a good UPnP software. Any recommendations? Tried MediaTomb, but it just made a mess of it.

I have a poweredge R610 but I plan on selling it and get something more flexible to use as a NAS since the 6x 2.5" drive slots are cancer in terms of storage. Not really sure what to buy though. Do I really need ecc memory for freenas?

Add a Perc6, and a couple MD1000's. You'll be fine.
I hung 2 Perc6's off a 2950 and ran it as a 20TB file server, using 750GB drives.

I can't speak to transcoding, but if you're not encrypting that frees up a lot of power and data bandwidth for the transcoding.
ZFS is nice if you have lots of ram, because it can prefetch and cache in the ram, and snapshots are nice for easy backups.
with 16gb of ram, I'd go zfs for sure, otherwise you would be wasting much of that ram.
