Boot a Linux live disk and browse her browser cache for images and urls.
Then backup the USER.DAT file in her user profile directory, change the password using the chntpw tool (only live distro I know with this is Chapeau or Kali). Reboot and login as her in Windows and browse the browser history, her preferred browser may have her credentials cached for Facebook & email sites and the like so you can access message history etc.
When finished boot back into the Linux live disk and replace the USER.DAT file you backed up.

You can't. If someone has physical access to your computer, you're fucked, plain and simple. Although, some BIOS/UEFI support password protecting so you can't boot without a password; that would cover you if they aren't prepared to remove your hard drive. You can probably reset the password by booting into command prompt, changing it there, and then logging in. Unfortunately, this is very traceable and you will probably have to disable the password all together after you're in. You MIGHT be able to get away with saying that a windows update disabled it, though.
Other than that, like everyone else is suggesting, use a Live USB or CD.
So, I'm following this tutorial, see if I can change my own password:

OP here, I'm back. Took her user folder but there were nothing interesting in it.
