You're getting a couple of different concepts mixed up.
Wayland is done, what we need right now are compositors making use of wayland.

I went balls deep and installed Debian testing. I love xfce, but why do some programs look awful? qbittorrent comes to mind easily. Transmission is great though.

so I did as everyone urged and tried to install Gentoo
but I'm currently stuck as there is some kind of error in making the kernel... I'm not advanced enough to make a manual kernel, just ran the standard emerge --ask sys-kernel/gentoo-sources to have it automatically configure but I'm getting errors.

I just installed Fedora and set up enlightenment, really loving this DE and distro, but i have this extremely annoying issue where the mouse will jump when i'm on the de.
with firefox or other full screen apps open it's fine, but when the dem is visible the mouse will randomly jump somewhere on the right side of the screen and left click.
It doesn't do this in gnome or XFCE so I know it's not a hardware issue. Any way to fix this?

I've never used anything else, but I've been using Postfix for years in a relatively sophisticated configuration without trouble. My only complaint is that the configuration is a bit complicated, but I doubt that the alternatives are much better in that way.
Last night I created a Live ISO of Mint on a usb drive so that I can boot to it on my macbook. I used this installer: http://www.pendrivelinux.com/universal-usb-installer-easy-as-1-2-3/ as suggested by multiple tutorials that I found online. It gave me the option of creating up to 4GB persistent storage for the system so I used that maximum as I am running on a thumbdrive of 128GB and only plan on using it for my Linux OS. However, I am curious as to whether or not I'm able to expand this persistent storage so that I can fit a few more programs on it and if I am unable to do so, am I still able to use the drive for storage outside the linux environment (in the space that isn't taken up by the OS/Persistent storage)?

Each operating system needs at least one hard drive "partition", which is a section of a hard drive that contains its own filesystem. By re-partitioning your drive (reducing the size of your Windows partition to make room for a new one), you can add an operating system to your current drive. You could also have multiple operating systems on multiple drives. All that matters is that you have at least one partition per drive.
If you have multiple operating systems, you will be able to select which one you want to use when you turn your computer on via a menu provided by a suitable bootloader, like GRUB, which is normally what Linux uses on desktop systems.

In Gentoo you have to use "xset" to configure the X power management "features". These settings do not persist between sessions, so you have to apply them every time X starts. You can do this by adding them to ~/.xinitrc. I have to usexset s noblank & xset s off & xset -dpmsin order to prevent screen blanking. Not sure whether or not it's the same for everyone on all systems.
As a side note, you can use "xset dpms force off" to put your monitors into standby, and presumably "xset dpms force on" to turn them on again. If you want your monitors to turn on and off at certain times of something you could use a cron job (you'd have to set the DISPLAY variable). After you use those features you have to do "xset -dpms" again or screen blanking will be re-enabled.
