Bring suppliments, protein powder and daily vitamins are a must if you want to stay big at sea.
Lifting can be dangerous at sea in bad conditions, be prepared to skip or go lighter with your lifts.
You'll probably spend a lot of time sitting around on watch so don't skip cardio. Ships have a lot of steep stairs and long ladders that can help, treadmills are iffy I always set the incline high because if I rock forward while on them I don't like running downhill.

Clearly you have never been on a ship, it's not a submarine they have plenty of room in the superstructure to fit a gym. I was on a 250foot supply vessel and we still had a gym.
At the very least you should have some sort of cable machines.

There's a gym equipment fitted on all international vessels, as required by the Maritime Labor Convention of 2006.

In danish flagged vessels they have salad bars. Though it still depends on the chief cook and the mix of the crew on how the food will be (Like if you're in sin and HK flag most probably you'll have noodles every once in a while, or curry)

I've only worked in the offshore industry, and the food there is really good. Merchant navy will depend on which company you work for. I've done a short stint as a mate on an AHTS from Maersk, food was okay but you were limited in what you could choose. Offshore vessels often have four or five different dishes you can choose from, ranging from Asian to European/American.

I've been there, and got a lot of shit for choosing to spend my time in the gym after the 12 hour shifts instead of smoking (nr. 1 pastime on a vessel) and playing pingpong. Having a good fitness helped with the work on deck such as tending the mooring lines, doing all the inspections and shit.
But with regards to fitness and diet - it's all up to you. I always bring my TRX-kit so I can train no matter what, weather depending of course. Breakfast consists of whichever vegetables they have cooked with the least amount of oil and Malay style eggs (which suck, but are the best option). Lunch is your main meal, since it's halfway during your shift so I would try to eat as paleo as possible with large amounts of meat and vegetables. After my shift I would eat some fruit if we had that onboard (only the first two weeks after being in port) or a large amount of boiled eggs if they were available.
I've spent quite some time near the equator, and it's impossible to gain weight when you're there. The constant heat has you sweating all day long, so it's a good time to start your cut if you want. Be careful with a lack of food, I've had more heat strokes than were good for me. I've spent some time in Russia near the polar circle, and it was awesome to train outside on the helideck in sub-zero temperatures after sitting inside all day.

The problem is freeweights are a big no no on smaller vessels, and you often get stuck with a shitty cable machine that has been raped on the regular by inexperienced guys with a midlife crisis. The majority of the exercises you list are difficult to perform on a rolling and pitching vessel, especially during transit.
I up the amount of cardio in order to prevent depression, which seems to work. Also, no matter how many porn you bring, you'll get bored of that shit within 2 weeks. Make sure you download all kinds of stuff.

Rolling and pitching won't be that bad, especially if you end up on the E-class. It all depends what country you're from, because Maersk USA has their own independent fleet for example.
You will get depressed, and you will have some regrets about your career choice, but in the end you get to do some pretty cool stuff on a young age. Be prepared to kiss your comfy lifestyle goodbye, and say hello to a lack of privacy, high workload and irregular working hours when you're in port. Port calls are non stop chaos with a pack of retards invading your vessel and breaking everything they come into contact with. During transit you try to rest for the next port call, whilst still doing your daily shifts.

Have barely had any first hand experience with them, but generally they stick together and regard the oldest person as the boss.
You're all on the same boat and backstabbing won't get you a higher position or anything, so you can't really tell the true colours of anyone when you're at sea.
The country itself is one of the most corrupt in the world so you'll definitely find some who stabs you in the back without a second thought.

Communication is very important for ships these days so IT is actually necessary, but unless there is new hardware/software to be installed you'll mostly be a consultant on a phone if a ship's electrician can't figure out an issue.
