I can do 3x6 dips now at 73kg (161lbs), I want to start adding weight, is it acceptable to bring a cheap draw string bag with me and throw a 5kg plate in and wear it during dips? How smaller weight increments can I use?

Don't, for crying out loud. When you can bang out 20 consecutive perfect, deep reps, THEN it makes sense to add weight. Trying to add weight just for the sake of adding weight is a distraction that gets you nowhere except snap city.

Thank you, I wanted to stick to 5x5 which is why I wanted to add weight. Isn't doing 5x20 too much volume and not enough intensity?

Dips isn't an exercise that lends itself well to super low reps, which 5's kind of are. Personally I'd never (as a rule of thumb) go below 8 reps in the dip. 8-12 works well, but as many as 20 or even more reps works too if you like taking your sets to failure.
You do it to build muscle so getting some volume in is a good thing.

If you do decide to add weight sooner rather than later, don't make the mistake of trying to slap on a 20 kg plate from the get-go. Realize that even just 5 kg is actually a pretty big step up from bodyweight percentage-wise.

Go for it.
My gym has a belt you can hang plates from so I don't see why yours wouldn't allow it.

Thanks, mine doesn't have that, it's pretty sparsely equipped, but I figure I can just use a cheap backpack or rucksack of some description

If your pic is your belt you should be able to just attach a chain with a carabiner clip and you're good to go.
