How can I stop my hands from hurting so much when I do deadlifts?
I literally can't progress on deadlifts because my hands hurt so damn much. Its like the whole time I'm holding the bar my hands are screaming in pain. It makes it nearly impossible to concentrate and keep a good grip. And because of this the bar ends up falling out of my hands.
It sucks because I know my back and legs can lift so much more. But my hands can't take it. I've tried gripping the bar all sorts of different ways and none of it completely solves the issue.

Do you just let the calluses build up? If they get too thick, the skin around them can tear. Get yourself a pumice stone. They're dirt cheap and last pretty much a lifetime. Scrub the calluses once a week under the shower. Don't remove them entirely, just remove a layer and even 'm out.
If it's a grip thing, use straps on the work sets and do some additional grip work on the side, like static holds.

do actual grip training; two plate pinch, farmer's carries, grippers, hell even grabbing a two liter bottle by only the cap and walking around like a moron, it all works. my hands used to rip, now I can close a CoC #3 (for a millisecond)
