Can you make good progress without squat and deadlift ?
My gym doesn't have a barbell, only Dumbbells. How much will this suffer my gainz? If I can't do the basic compound movements like squat and dead. I can bench but only with Dumbbells

I went from 54 kg(%8 bf) to 81 kg(%12 bf) in shorter than 2 years with nothing but a pull-up bar, bench, a few dumbbells and a dip stand. In my home. So yes you can always make progress as long as you are lifting harder than the last workout and supplying your body with enough protein. All it takes is dedication really.
However my legs are DYEL since I can't deadlift or squat with bigger weights, obviously. I found a nice gym nearby and I'm gonna start going there and start working on my legs.

You can get progress. Not good but still, worse is nothing.
Change gym or do some bodyweight + dumbbells routine.
One leg squats are more lunges than squats but do them.
No good replacement for deadlifts though. Good mornings, back extensions, you'll have to get creative.
Suboptimal but: doing nothing is worse.

the best weight program will use a mix of barbell, dumbbell, bodyweight and cable exercises. In the beginning, bar bells are the best for developing whole body strenght. However, you can do this with dumbbells, just after a while you will be limited by grip strenght and the weight of the dumbbells.
