I just can't seem to ever stay below 2300mg/day. Some days I even pass 3000mg. How fucked am I and how do I keep my sodium intake low?

If you go past your daily sodium then drink more water
Most likely you are fine. If your blood pressure is okay then you are okay. If it's not, eat more potassium and drink more water and try to eat less packaged stuff and restaurant food, that stuff is loaded with sodium not just from salt (NaCl) but sodium-containing preservatives.
Sodium intake doesn't matter if you aren't obese and can stand the extra water retention.
I used to freak out about sodium, but a very /fit/ dude reassured me it's not a problem, unless you're fat, or have blood pressure problems
absolutely NOTHING
NOTHING is wrong with salt, please let this meme die. Unless you are sensitive to salt, nothing will happen if you eat a lot of salt. This stigma is probably related to the fact that almost everything unhealthy contains a lot of salt.

Salt sucks. Literally, it pulls/sucks more water into your blood stream. This is like more water through a garden hose. Pressure builds up and thats where high blood pressure comes from. If you BP is fine then you should be fine.

Nothing is wrong with salt, it doesn't pull more water into your blood stream, it CAN pull more water into your extracellular matrix

I've read more pubmed articles than you have teeth. So at least like 32.
