I am also exactly 6'0 185 lb (are you me?) and I also eat around ~3000 kcal/day without exercising. We are thought to have a high metabolism but have you measured your gut recently? Ever notice how it's just barely starting to hang over the belt line?

MyFitnessPal has me mapped to make it in a month.

Caloric deficit is to make 1850 calories a day. following a low carb high fat diet. With macros of 140g protein.
I'm learning what to eat pretty good, but I'm not making my caloric and protein goals. I'm averaging 1500calories a day. And It's sometimes difficult to get meat, so on average I can make 100g even with a protein powder supplement. I am afraid to eat too much dairy because of my health. I know I can easily reach protein requirements with cheese or greek yogurt.

Ultimate goal to be fit and low BF% at 170~200lbs. Sadly my skin is gonna look fucked up, and I think I have pretty severe gyno on my left chest. But I'm going for it anyway. Maybe I'll slow down at 240 and see the damage from there.

Bonus stats:
My highest weight ever was 318 for a few months 7 years ago, because i didn't know how to eat properly. Thankfully I deflated down quickly before it had a lasting effect.
I haven't been below 250lbs since I was 16

Thats spring maintenance. For summer I'll cut all but one piece of fruit, cut oats, cut eggs to 3, cut shakes to 1 and ewith water, and cut carbs from supper for about 6 weeks.

I'll hit 165 lbs and be lean as fuark. Then fall i'll re-add the oats/eggs/shakes and add more rice, starch and small amount of grains and get up to ~180

It's been going pretty well. Eating just about 200 grams of protein a day, combined with 200 calories worth of flax-seed/fish-oil.

I've been playing around with PSMF's since January 1st - 6 weeks on, 2 weeks off, 4 weeks on, 2 weeks off - dropped from 345 to 282 over the course of 10 combined weeks of dieting. Currently on week 3 and planning on riding this cycle to the end (or 12 weeks, whichever comes first).

Well, I dropped from 430 to 345 using conventional methods. My deficit was pretty steep at the time - something like 800-1000 calories - but when you're that massive your BMR is in the 3000's. That took about 8 months? Which was plenty of time to fix my relationship with food - I don't crave sugar anymore, I ate healthy, I ate regular portions, I see food as fuel now rather than a band-aid to slap onto emotional distress/boredom.

When the fast is finished my plan is to increase caloric intake by 300-500 calories a week until I'm at BMR - keeping an eye on the scale, of course. Then start up a modest bulk - some 300 calories and see how it flies.

Gonna be lifting on a surplus for the first time in my life, I'm excited.

It's really not, though. Being obese is definitely bad for you, but sub-1200 diets are much more harmful in the long run. And in the short run, they'll lead to less weight loss per week/more muscle lost per week than a safer 1400-1500kcal diet.

Cals: I stopped counting and switched to low carb, moderate fat and high protein paleo-type diet (still have dairy) diet around new year. Excess body fat is fucking melting off. 7Kg weight lost and my linear progression is still improving albeit slowly. Bread and pasta etc to me now is just empty beige filler. It's the scientific term for what some people call starvation mode, metabolism slow down etc.
