Also, to keep this kind of /fit/ related, How often can I do *heavy* deadlifts? Is 3x5 twice a week overkill? Since deadlifts are arguably one of the most complex exercises, I'm not sure if the same formula for all other exercises applies to them.

So, 20kg for the bar + 55 on each side = 130kg in total

At that weight you should be fine (I wouldn't recommend it though) but if your form isn't on point it will almost certainly cause an injury. As you go heavy you should change your routine

I do SS(but with a lot of accessories) and can DL 275. I have consistently added weights until this point. My first time hitting it my back felt like it was going to snap, but yesterday was just a bit tight. Tomorrow I'll go for 285. I follow SS as far as diddlys go, so I only do 1x5 once or twice a week, and I'm slightly more than 2 months in. My point is, I've progressed very nicely on them at just one or 2 sets a week, more just doesn't seem necessary.

showed is to always hold the bar where it's going to go. you're deadlifting the bar up? the bar will want to go down into your hand, so plan for that and grip it with that in mind.
