That's more volume and heavier load relative to 1rep max
It's more strain on your body

5x3 will adapt your body to strengthen training more, 3x5 will adapt your body to hypertrophy more (albeit only slightly more than then 5x3, might as well go to sets of 8-12 for hypertrophy)
