Alright, this is what I do.
First, I suggest setting aside some money for spices- they're really expensive but once you have an assortment in house, they'll last forever. Also, always have your favorite powdered broth on hand (I use chicken). If you're too lazy that day to actually use your spices, just dump in a spoonful or two into whatever you're making for flavor.
Next, use vegetables as your base food (my fave is zucchini, brussel sprouts and potatoes). Always have canned beans- I don't know what it's like in the states anymore, but I can get a can of kidney beans for 70 cents over here. Corn, lentils, chick peas, whatever. Anything except mushrooms, because canned mushrooms are fucking nasty. Also pureed tomatoes and frozen spinach.
For grains I usually use couscous cuz I'm a lazy piece of shit, but rice is fine.
I make almost all my dishes with a mix up of that, and occasionally I put meat in there. Without the meat and whatever I splurge on, I'll spend about 20 bucks on all of that sans spices, but it'll last me all week.
And get a good cook book.
Also don't buy vidya.

Currently a big pot of bean sprout stew, which is my carb refeed meal while on CKD. I usually start sprouting 1lb each of beans/lentils and rice 3-4 days before making the stew, then throw the sprouts in a pot when they're ready.
Usually 2-ish pints of water is adequate (I prefer to measure it out since I don't discard the water), or just enough that you can see the water line just below the surface of the sprouts. The water does not need to cover them since the sprouts will wilt and shrink underneath the water. Add some salt to taste.
Get the water boiling and let the sprouts boil for about 20 minutes to soften up the remaining starch. After about 20 minutes, or until they're looking soft, reduce the heat to a simer.
Add whatever you like at this point. I've added bacon or ham with good results. Also, I like to add about half a bulb of garlic (~6-8 cloves) and 1lb of greens (turnip, mustard, whatever). I usually just put vegetables in it, though, and leave it vegan-friendly (not that I give too much of a shit, but it's just cheaper).
Simmer for 5-10 minutes, then serve. I like to season with olive oil when I serve, maybe salt if I didn't put enough in at first.
170g of complete protein (legumes + rice), plus whatever meat you decide to add, or boost it further by boiling it in about 2 pints of bone broth. ~170g of fiber (which does wonders to clean you out over the next two days), and ~350g starchy/sugary carbs. I've heard sprouting affects the vitamin content of legumes and rice for the better, but I haven't found anything definitive to report on, though Vitamin A (beta-carotene) is supposed to be substantially increased from what I recall.

Garlic Pepper Chicken
I ate this for the first time in Railay, Thaland. Super easy to make and tastes delicious.
1 chicken breast
1 large garlic clove
1 green onion stalk
1 tbsp soy sauce
Salt&Pepper to taste
Chop up chicken breast into cubes, whatever size you want. Pour a little bit of olive oil into a hot pan, fry chicken. Season with salt and pepper. While chicken is cooking, finely chop garlic clove. When the chicken is white on both sides, add soy sauce for color. When chicken is almost finished, add garlic and toss the chicken in the pan to cover equally. Keep on for 30-45 seconds, remove from pan before garlic burns.
Serve on brown rice or eat by itself with a vegetable.
