Would there be any consequences to just eating grilled chicken tenderloins and steamed broccoli? I'm trying to cut so I'm watching the intake amount, variety just doesn't interest me

You'd be shorting yourself of quite a few vital nutrients. Not to mention you WILL get sick of eating that after about your 5th or 6th meal. If you wanna go bare minimum add in some carrots and peanut butter, then you at least have your main nutrients..

I'm not one for variety either, chicken and broccoli is every meal for me and I don't mind one bit.
Cutting with 3 meals a day each consisting of 4oz. chicken, 1 cup broccoli, half cup brown rice + hot sauce for flavor. After that a bowl of oats + cinnamon, then some fruit (strawberries, banana, or orange) + green tea. That's it, and it works fine for me.
