is there any reason not to lift 3.5 times a week instead of just 3 as a beginner? weekends are a social construct, after all.
I'm also wondering this as a relative beginner. Don't see the point of waiting an extra day once in a while when I'm already ready to go.

That would be the only reason, scheduling. Some people can only get to a gym Monday, Wednesday, Friday, etc. Or, for some people, it's just easier to remember "Monday is chest day, Wednesday is leg day, etc."

I generally just go as long as I don't have DOMS and try to take one rest day per week.

Just train every other day. There will come days where you can't train, and you wish you didn't take 2 rest day before.
