I haven't lost as much weight as OP(lost 20lbs so far) but I have a similar concerns. As someone who has been 230 lbs(now 210) at a height of 5'8... is my body permanently salvageable or is there hope for me?

How did you go about cutting?

I do 30 mins of weight training and 45 mins of cardio at least 5 times a week. For weights I mostly bench and do db curls. For cardio I use a high resistance stationary bike.

So i walked my calories up to 4500 in the off season, held weight a 198, started pulling quite slowly at first got down to 190 without going below 3500.
then went a bit more drastic, finally down to 2750 for the last couple weeks.
I also do cardio, and BJJ pretty much everyday.
Workouts are sorta the same as when bulk, just a lot less PL focused and more hypertrophy but still push pull legs, workouts take about 1.5-2 hours.

I cut very slow from to 190 at first. Recomped, for 6 months, then cut to 183, then bulked back up to 195 then cut down to 180 then bulked back up to 200, now im down to 180.
