Generally, when people have suffered an accident, or have suffered damage, they want to be able more than anything in the world, to make jokes like that themselves about their condition. You can clearly see the difference between someone who is well-adapted to their situation, and someone who just can't cope with it.
If you deliver the joke in a friendly, light-hearted but still encouraging spirit, confidently and just with a fucking... positive air about it, she'll love it. If you can pull off a laugh from her, she'll realise that she CAN laugh about it and adapt.

you can do anything with computers. Learning curve to get your speed back up, but lots of typists with a prosthetic are fine. You only need one hand to hold a pen or a paintbrush. That's lots types of art or writing. You might take a little longer with the tablet pen and computer, but you can draw fine. Yes, manual labour is tricky, medicine is out aside from the research you mentioned. And do some more research into prosthetic hands. the tech exists for some fancy shit. Is it as good as a regular? Fuck no. but its good enough for shit like typing or controlling a mouse.
