Just take it easier on the squats and deadlifts, and start focusing on the accessory work. I can't see the upper body, so I can only recommend calves on either smiths or leg press machine. You're doing fine.

I usually skip squats because my legs are already pretty big from rugby. Like, have trouble finding pants that fit, big. If I feel like a leg workout i'll turn the resistance up on the exercise bike.

No, but I'm definitely stronger in my lower body. What's the best way to let my upper body catch up? Take a break from squatting or lower body or just coasting as far as intensity goes?

I'd just take advantage of those big legs, buddy. I can believe that they're impressive but I'd just up my volume for upper body. Do at least two bench sessions a week. Focus on deadlifts in the meantime to bring out your posterior chain. And I'm from Washington PA, lived all over Greater Pittsburgh; Wheeling, Weirton, Carnegie.
