Evening, /fit/. I just got my first gym membership today. I'm 100kg and 6'1. I want to drop to at least 80kg but at the same time give myself thick arms, core, chest and shoulders.

Where do I go from here?

The biggest thing is sticking to your routine. You're gonna progress but as you do you're going to find a million little things you want to fix, change, or adjust in your workouts. You'll probably ask here a few times about "whats a better way to hit shoulders?" or something else you feel is lacking.

Find a reputable routine. I would recommend SS but you're going to want to eat at a deficit for the sake of burning the fat, and Im not sure if that would work very well, so maybe try PPL or something, it's worked well for me. Form on your exercises is your number 1 priority, and follow whatever you choose to the T.

As for the fat burning, just eat at a ~750kcal deficit daily, and adjust every 2-3 weeks. Throw in a bit of cardio if you want to eat more, and just be fitter in general. Make sure you get at least 180-200g of protein each day, and after all that, you'll be sweet.

After doing a good warm up on treadmill just walking. Hit the freeweight section.

Do dumbbell exercise at first. Start with flat dumbbell press. Next is shoulder press. After that do bicep curls.

Try that as a workout.

Next visit I would repeat that process, but maybe exchange some of the exercises for different ones.

If you're ok with losing weight slowly while you build muscle, don't worry about a calorie deficit. Count calories and eat exactly your TDEE. Do SS+accessories and run at least 30 minutes on off days.
Doesn't necessarily have to be SS, as I know a lot of people are always trying to shoot it down. It is a good program for noobs to build strength pretty fast though. SL would also work or PPL. Main thing is lifting + cardio.
