Are there any foods you could eat daily to basically guarantee you hit your fibers? Without worrying too much to get whole grains in the rest of the day?
Also how much veggies and fruits are really necessary to eat daily? i dont really wanna eat 2kg of that mainly because of the price.

Psyllium husk is the shittiest way to get fiber. Comes with practically none of the benefits of fiber, only helps you shit more.

Corn and oat bran
Sprouted bread, Ezekiel bread
Avocado
Raspberries and blackberries
Coconut flour

Grains are alright for fiber but the ratio is typically shit. If you could find a way to get seeds like flax, psyllium husk and chia in your diet it would be huge too. I experimented with making bread with flax, chia, and egg and it's not that bad but a pain in the ass to form. Coconut flour is great but the bread it makes is drier than the sahara, adding some flax and extra egg helps.

Mix with kidney beans, pepper, and cajun seasoning. Throw in some cooked and seasoned ground turkey too
