At 6'11 you'd only be useful as a pass rusher. On run plays, your center of gravity is too high and offensive linemen will easily be able to get underneath you and get you moved, especially with double teams. Then theres chop blocks too.
Height in football becomes really crippling once you get past like 6'5.
