put yolks in mixture and make sure they covered by it.
Leave them for like 3 weeks.
Remove yolks from salt mixture and hang in cheesecloth to dry for however long you want cause they last indefinitely at that point.

With cholesterol, your body produces so much on its own that adding more to it is detrimental to long term health. In fact eating fiber is important for health in part because it removes excess cholesterol.

gather 14 of them, add thinly diced garlic and about a lemon worth of lemon juice and start beating it with an electric beater.

While you're beating it about 10mins in you'll want to add oil to the mixture, slowly drizzling it. Keep slowly adding oil to it over the span of 30mins until texture is perfect (when fluffy enough that you can grab a spoonful and turn it upside down and it won't fall)

we're all active and eat enough fiber, here, and the yolk has a number of other micronutrients on top of cholesterol.

I am in nursing and recently studied the difference between the 2 types of cholesterol.
HDL - High Density Lipoprotein (Good)
LDL - Low Density Lipoprotein (Bad)

LDLs take fats synthesized in your liver and deposit them into your tissues, excess end up building on the inside of your blood vessels and fucking up your blood flow (called atheromas).

HDL does the opposite, it takes cholesterol from your tissues and blood vessels to the liver to be broken down.

The cholesterol in eggs causes your body to create HDLs.

There have been a ton of studies on the effect of egg yolks with opposing findings. Do whatever the FUCK you wanna do.

Except the totality of evidence suggests that they are harmful in quantities over one a day and even less than that in some special populations (e.g., diabetics). Current consensus by the Institute of Medicine is to keep cholesterol intake as low as possible.
