Alright I'm gonna go strictly off the picture you uploaded, and I'm gonna assume that you want to be able to do barbell training in here and you'll find wherever to store plates and dumbbells. This will require likely some actual gym equipment being cut down and latching mechanisms being welded to, as well as good general know how. But it definitely could be done. So here's how I'd set up a home gym in that RV.
Red arrows, that's you bench, the actual equipment will extend down to the floor and the posts will simply latch onto the desk and taken off and stored when not in use, toss a couple of pieces of plywood screwed together so you can get full range of motion, bench handled.
Blue arrows, that's your squat rack, same deal as the bench, extend down to the floor, latch onto the bottom of the bed, able to be removed when not in use.
Now it is very important that the equipment extends down to the floor, that where your going to want the weight balanced on, the latches are JUST TO KEEP THE POSTS IN POSITION. Normal RVs are not going to have these areas built strong enough to support all the weight on two small points, you need to have resting on the suspension as much as possible.
Yellow arrows, just build yourself a chair that hook onto that type of ladder, move the ladder between your squat rack, bang, you have a place to OHP. I'm guessing you're too tall to do standing in an RV, so this'll have to do.
For deadlifts, buy some thick rubber from any hardware store, and make sure you don't drop under any circumstance, that will most likely fuck up your suspension over time.
Green arrows, that's your storage area for posts/barbell, this you could probably mount by drilling some holes at the bottom of wood holding up the bed, attach some U-shaped brackets, screw some 2x4s to them on the underside. Have something at the end to prevent them from moving during travel.

Bear in mind, this is just a plan of the setup, and general rules to prevent you from destroying your RV/injuring yourself. You will have to adapt it to your own RV, and the actual hard parts like figuring out what latching mechanisms will work in your setup. Basically, the serious thinking is on you.
Another suggestion for the latches is, have them similar to actual adjustable latches on racks, so the posts can be lifted into place and fully rested on the floor of the RV.

I wouldn't bother if there was less than 240x180 cm of space
if you go narrower than that you'd either have to get one of those shitty shorter bars that likely come with 30 mm sleeves (so you'd have to get shitty 30 mm hole plates) as regular bar is 220 cm long and you'll want some room to spare to be able to load the bar for one thing.
any shorter than 180 cm and you'll have trouble fitting a bench and/or won't have any space to deadlift on.
all you'd need is pair of squat stands similar to pic related, adjustable bench, barbell, plates and ideally some sort of platform made of plywood and garage floor rubber mat or similar.
