I don't feel I'm training enough /fit/ I'm doing stronglifts 5x5 and the off days make me bored.

It's an ancient /fit/ meme. Seriously just go do some kind of cardio on rest days. It will not only help you stay lean, it will also keep you more energetic on days you lift

Just came back from the gym (rest day) doing skullcrushers and pull ups.
To be honest I'm not really experiencing any soreness during my rest days and I've been doing 5x5 for about 6 months.
Swimming.
I swim 4 days a week, besides stronglifts. Helps me recover as well

If you can do all your sets with the extra 5kg then yeah, but you're not going to be able to do that on ohp or bench really.
Not OP but I have a question?
I do SL5x5 and boxing on three rest days.
Now my boxing club started teaching noobs about technical stuff two days of the week which I wanna go to. Is it okay to lift on the days I'm having technical boxing since it's not as intense as the real boxing? If not I would only have one day of lifting every week which will do absolutely nothing.

To put it simply it depends on your goals. Any sort of activity WILL affect your weight training negatively. The more you do the more it will affect it. If you find yourself failing lifts while you are eating/sleeping well then it will probably be your activity level.
