Neckbone/oxtail soup. Pork neckbones etc probably the cheaper marginal bone.
Try to not get bone chips in your soup
2:1:1 for onions, carrots, and celery. Saute first, then boil. Cabbage, your choice of any tuberous vegetable really. If basic, potato. Turnip etc are also an equally valid option.
