Started bulking at the beginning of July. 115->140 lbs at 5'11. Feels like I'm only just getting started though, can't wait to see how strong I'll be after one whole year training

One week is A/B/A and the other is the opposite. Don't know how optimal this routine is but it's working well for me.

why the hell do people feel the need to alter the basic 3x5 SS program

you don't need leg raises or shrugs if you're 140 lbs. you should be primarily focusing on barbell lifts. out of curiosity what are you squatting and how are you going about making progress on it?

I'm at 160 lbs currently. I'm ashamed to say it but I only started squatting a few months ago. At first I listened to the gym guy and did leg press but I learned squats were better so I've been working on them. I do shrugs because I have a fucked shoulder and I've been told it would help with it. Why not do leg raise though?

i'd honestly recommend just doing SS. for your shoulder just do these stretches in between sets of your other lifts

as far as leg raises, you will build the exact same musculature (as well as many more additional muscle groups) performing heavy deadlifts instead. these can also be weighted (durr) and increased over time, making you stronger.
