Well if you don't want to deadlift then don't. There is no exercise out there that is a must do. But most people will learn to love squats and deadlifts when they get their form and progression right. Before that, there are only losers and pussies. But if you can do them with a good form and actually make progress - and you still decide to skip them, you're okay tier.

Weird thing is it's only become a problem recently. I think some of it must be in my head because I can't even DL 315 now without it slipping after a couple of reps when before it was never an issue.

Yeah mixed grip is standard obviously. Never tried hook grip, straps or chalk but will probably give straps a try soon.

I think I might actually be developing carpal tunnel or some shit my grip has gotten really weak. Like I said I have baby hands but it was never this hard to deadlift until recently.

And then you record yourself and realize how many things you are doing wrong. DL is actually a complicated lift, when you have to properly set up, contract your lats, keep your neck neutral, arch your lower back, load your hamstrings and glutes, take a deep breath etc.

Why does the amount I can deadlift vary so much day to day?

Two days ago I pulled 315 for 3 with no trouble

Today I could barely pull 295 for 1

I've only been lifting for ~7 months

Only thing I can think of is that my food / sleep hasn't been great lately (th-thanks christmas)

Is that enough to have such an effect on my deadlift?

You don't need deadlifts for a good body, sure they are great as they allow you to exercise a lot of different body parts in a short time, but they are not really needed. Pic related doesn't do either deads or squats, there are other alternatives, albeit they cost you more time as you gotta exercise every muscle separted.
