OP here, I'm not a vegan Jesus Christ, fuck vegans and the whole concept of veganism. It's just that red meat is expensive and if I eat a lot of chicken I just won't be able to stick to it anymore. I can barely eat eggs anymore and too much milk at once gives me the shits.

Nitrogen balance is not what should be monitored. Muscle/protein synthesis should be monitored. There are more recent tests that suggest .82g of protein per lb of lbm (not bw) to maintain during a deficit and .68g of protein per lb of lbm for a surplus.
