As I said above, there are plenty of pathogens in meat already and that's why food poisoning exists. We have a pretty good way of dealing with this by just cooking our meat and killing everything.
While that alone is by far enough to make this irrelevant, it's just food poisoning. If EHEC and Salmonella suddenly became resistant to all forms of antibiotics it wouldn't affect you. Why? Because unless you're in a third world country where water is hard to come by, it's a self-limiting disease, meaning it'll cure itself without medical aid. Antibiotics have never been the optimal method of treating someone with the shits.
The only way this would be relevant is if the plasmid transferred to something more applicable like MRSA which would have nothing to do with meat consumption.
