wheat "causes" inflammation because it uses up a lot of enzymes to break it down so you have less enzymes available to break down material in the blood (which is how you resolve inflammation). If you eat fermented foods regularly (miso, kefir etc.) then your stores of enzymes will he high and you won't have to worry about what you're eating. I also use an enzyme supplement, but fermented foods are supposedly superior and all you need.

What are you on about? Exercise improves insulin sensitivity. Insulin sensitivity is a good thing. Insulin resistance is causally linked to an overwhelming number of health problems and is inflammatory in and of itself, hence the plateau effect seen with the insulin resistant people in that study.
