Depends on what you define as the "nutritional value". In a more general sense, that is certainly not true. By far most of the nutritional value is preserved, however it's perfectly possible that some vitamins and whatnot can't handle the heat. Fortunately, there are hardly any of those in olive oil anyway. Olive oil has a high share of unsaturated fats, which is considered valuable (I think that's what is meant by "nutritional value" here). Unsaturated fats are generally not stable. High heat can damage them. However, the unsaturated fats in olive oil are mostly monounsaturated. Those are generally very stable.

So no, I don't think it's true. It's of course perfectly plausible that the polyunsaturated fats are lost (11%), but that's not "most" or even "all" of it's nutritional value.

So fuck that, you can cook with olive oil just fine. And unsaturated fats are not the grail of nutrition, it's recommendable to make sure that about a third of all fats you eat are unsaturated, but it's not really that relevant at all. It's blown up like every nutrition fad is.

It's an old wives tale. It's one of the best oils to cook/fry with on the withstanding changes to heat front but it's very rich so is often a bit much on the taste front

Why cook in anything other than coconut oil?

Or refined coconut oil?

I mean, shortening / lard is good, but it's an animal product so has no place in an educated person's kitchen. 'cept maybe at christmas amirite?

Various oils are great but why cook with them? I'm using cooking as the process of changing the make up of food through the application of heat - putting together a salad (an applying delicsious oil) isn't what I'm talking about. In those cases, apply olive oil liberally.

Foodbro here. We did the calculations (basic chemistry) and short answer: no. You need to heat it up a lot more that you do for basic cooking and for a much longer time. Olive oil is the most heat stable and healty oil you can use for cooking, next to coconut oil but that shit too expensive

Good quality olive oil has various time and heat/light sensitive compounds in it.

All the omegas (3, 6, and 9) are heat and light sensitive - over time, they will break down in oil, which is why you should only buy fresh olive oil. Always check for an expiry date. Cooking with omegas will always cause them to break down - the higher the temp the worse.

Olive oil also contains a variety of antioxidant compounds. You can taste these in good quality olive oil by the tannic flavour that is bitter and makes you cough. These are also heat sensitive and break down when fried. If your olive oil is smooth and flavourless, it's either watered down with cheaper oil, not really virgin or old.

Most olive oil you buy in the supermarket isn't good olive oil - especially ones imported from spain and italy. A lot are cut with other oils. Companies don't get checked and consumers don't know how to tell good from bad olive oil - and if you're just using it for cooking then it doesnt matter.

If you want to buy good olive oil, buy at farmers markets, and buy local. If you can buy a current press, better. Always try to get current olive oil. Freshly pressed olive oil should be cloudy.

tldr: most olive oil you buy in the shops isn't really worth consuming raw, so you may as well cook with it
