fat that's been slow rendered down to be soft and melt in your mouth is delicious but a quick cooked steak will leave and chewy and rubbery which i never eat

Saturated fat actually has a negative impact on muscle gain, maybe due to the decrease in insulin sensitivity it causes.

They overfed men on the exact same number of calories, but one group from polyunsaturated fat, the other from saturated. Saturated fat caused twice as much visceral fat gain, markedly more liver fat gain. Polyunsaturated fats caused THREE TIMES more muscle gain.
So, enjoy your suboptimal gains if you eat a lot of animal fat. It's true that animal proteins tend to be higher quality, but you want leaner proteins and you want to get plenty of plant protein too because the insulin sensitizing effects of fiber and various plant phytochemicals will probably help muscle gain.
