The wasted movement isn't so much wasted as it is spent on ensuring posture and form isn't lost.
It's sort of like when you spend a minutes before actually doing a deadlift on positioning yourself properly relative to the bar, tensing the correct muscles, mentally prepping yourself and ensuring you don't snap your shit.
It has to be a lot faster in fighting, so it doesn't seem as methodical or mechanical.
Part of it is also to "keep rhythm" yeah, it's easier to move into an offense or defense from a different movement than from a dead spot (like how it's easier to "bounce" off a squat's low point than just sit down, wait a sec and stand up again)
A lot of it in that .webm simply has to do with fatigue though.
