I don't know where you live OP, but here in Texas we have a grocery store called HEB. They have these "HEB Sauced" frozen vegetable packs with tasty sauces, about 120 calories total for a meal's worth of tasty veggies.
Dry pinto beans
Soak em overnight, dump the water, soak them again, dump water, and cook the heck out of them (don't salt until after)
$10 for a huge amount, enough for at least 4 massive crock pots full, tons of fiber, and 50/50 carbs and brotein.
I throw rice in the last 20 minutes of cooking with some extra water.
Meal prepped some burritos with that and some cheap chorizo and eggs, and I've got a week's worth of breakfast burritos for cheap af
Just supplement with cheap chicken and pork, also in crock pot, and you can hit your protein macros for way cheaper than eating unhealthy
