from pic 1 to 2 I just ate at various deficits (flexible dieting) and did body weight shit, for about a month and a half after pic 1 I stopped the body weight and became a lot more lenient with the eating.
For the past 2 months I have been actually lifting (doing SS) and was gonna bulk until like the end of march but I already have more fat on me then I want so now I'm just gonna cut down until I'm happy with what I see.

look up a split that involves an 8-12 rep program. i'm not that anon but while SS got me good results i really enjoy the extra burn of 8-12. great gains, the 12 reps are more like cardio so decent for cutting and that hypertrophy
a split would just be something like
back/biceps, chest/triceps, legs
i've had good experience making my own routine but i know how different lifts hit my body so just find a pre-written one.
also always start with a cut. you'll lose fat but still gain strength. once you can see your abs AND your lifts stop progressing start slowly bulking

One plate for 3x12 is not fantastic but certainly above most of the population and yes, you can be cutting as a beginner and lift more than that, it's not unheard of in the slightest and definitely not "some sort of genetic freak". Above 165-185 for 3x12 yeah I'd agree you need to be upping your calories. But until then there's no point.
