Help me do better than this /diy/. Needs to be adjustable vertically, be able to withstand heat and clamp on to the handle or side of the pot.

Get a small metal clamp (you can get some tiny G-clamps or you can go with something like picture related), get some thin wire, a couple mm thick, thin enough to bend by hand, thick enough to hold up the weight of the thermometer, wrap one end of the wire around the clamp, you can be fancy and solder/weld it on or you could just wrap it around a few times, on the other end make a small loop, big enough for the metal part of the thermometer to go through but small enough so the plastic body doesn't. bam done. You can easily adjust the height by bending the wire in whatever direction you need, all the materials are cheap and easily replaceable so if they corrode from heat/whatever you're cooking you can replace them, is hight adjustable for different pots/levels of ingredients in the pot.

to make it adjustable i would probably try some kind of rod with grub screws setup, like in pick related, this method is nice for ease of use while still keeping stability. then you just need a form of clamp either end.
