If I want to have something that runs off three AA batteries

If I want to have something that runs off three AA batteries run off of a non-battery power source, is it as simple as hooking the ends of it to a 4.5v supply?

Yes. Unless your device draws a significant amount of power (compared to AA battery ratings) and it has been designed to depend on the internal battery impedance.

If you are in the AA battery range, just use the ammeter/milliammeter function on your DMM. Put in series with the batteries and load and read the current. For DC, P = V*I
