Anyway, it's scratched to hell and I want to add a soft touch or matte finish to it. It's a fingerprint magnet as well.
How do I go about this?

Plastidip would be the cheapest and easiest way to add a matte finish and bonus for being grippy.

Make sure you sand it with the grain before painting. I'd do about a 3500 grit then probably matte.

There is no self-adhesive veneer. You need to apply a layer of adhesive onto the veneer before it can adhere.

Yes, quite right. No fooling you I see. Can't glue the veneers on with just the natural resins.
There is however a fairly large market for veneers with adhesive backing.
