But in all seriousness, a knife is a tool, use it to make more specific tools, a jig for fishing and hunting is best, good luck catching fish/frogs by jumping on them with your knife, plus the jig doesn't need perfect aim to hit the fish, and usually it will work to keep the fish on your stick where a knife won't hold a fish well.

Doesn't look like it. The way they want you to sew the plates together, a knife could slip behind one of the plates if the stab or slash was made in the right direction with enough force.
If you want knife protection I'd stick with chainmail armor. ABS plastic is great but if you make plates out of them a knife will find it's way between them.
That said, you're going to want chainmail made from small rings to minimize your chances of being stabbed. Chainmail is great against cuts and slashes but you'll need really small rings to defeat stabs, and even the smallest rings can be defeated by thin stabbers such as nails or ice picks.
