The back right tire of my ford 2000 taurus smokes (white smoke) when I drive my car. I think it's the brake caliper. How do I fix this?

Stuck calipers wont make smoke, it will stink and the brake rotor will be super fucking hot, like hot enough to see the heat coming off of it.
Oil falling onto hot exhaust can cause smoke to puff out, most likely a valve cover gasket leak if it is.

Just pull the pads off and look at them. It doesnt take much work to do.

Though I have a buddy who drove for like 2 miles with his emergency brake on.
He didnt reset the emergency brake cable when he did his pads.

His rotors were glowing red, and there was a very audible squeaking. There was no smoke.

Tire is dragging creating smoke. You've got a stuck caliper that is preventing the wheel from moving. Change the pads, rotor and caliper and make sure you haven't fucked the tire.

The only fluid by the back brakes on a 2000 Taurus is brake fluid, everything else is at the front of the car.

Sticky brakes don't typically smoke. You'd feel them seizing way before you'd see the smoke.

There's nothing in the rear right of your car that would cause it to smoke (assuming it's a stock vehicle, the exhaust comes out the drivers side rear, or rear left), which leads me to believe it's probably coming from your engine bay. Either that, or you're imagining things. In general, white smoke trends to be stream caused by water hitting something hot. Toys could be caused by a leaky coolant hose, or could be as simple as condensation from the a/c condenser hitting your exhaust manifold. Hard to tell without getting under the car.

I recently replaced disks, pads, and calipers due to one of the calipers had been stuck for a while. White smoke was never seen.

I've dealt with seized calipers several times and never seen one smoke. Look under the car and see if your exhaust happens to wrap around the rear right side. If it does I'd bet money its smoke from exhaust (you're burning coolant) because your brakes aren't going to smoke like that (at least without a very noticeable squealing) and you're not spinning the rear tires in a taurus.
