Told in 3 episode short stories about various characters of Lordran during and after the fall of the old kingdom. The passing of the 4 kings, artorious' fall, the flight of gwenevere and the dark sun's crafting of the great illusion of light in Anor Londo. The fall of Seath into crystalline madness. The covenant of the forest being founded to guard Sif and the passage into the abyss. The imprisoning of Dusk and her search for her hero. Maybe even a segment on the struggles of the crestfallen warrior and his eventual decision to brave the dark one more time.
If the thing were done well and without overmuch narration (sort of how the game plays out, allowing the scenery and events to tell most of the story with only the conversations between the peoples providing context) I'd probably watch it.

Yea, I think it would be best done tell mini stories. Maybe Bloodborne could follow a closer narrative to the actual game.
Each episode would end with the main character dying. The longest episode would go for an hour while the shortest one would be 30 seconds.

But in all honesty, Dark Souls' setting could theoretically work as a cartoon where a band of Undead travelers is trying to make their way into Lordran, but rather than have any of the "main" characters be the Chosen Undead, the cartoon/anime would center around character /political motivations such as the Church of Thorolund and the Clerics' missions or just simple things like Patches being a goofball.
To be perfectly honest though, Demon's Souls provides a leagues better setting for a cartoon/show/movie since the lore is a much more coherent package and the in-game stuff meshes better together with the story elements(harvesting souls).

Remove interdimensional invasions.
Make it a heroic adventure with horrific dark twists about a Chosen Undead who ends up having to fight his way through a hollowed kingdom of undead who are essentially acting on pure instinct with the odd monster.
Have secondary characters like Siegmeyer and Solaire as his party where they keep leaving and rejoining based on their own objectives with random secondaries appearing for certain things like Tarkus appearing for Iron Golem.
Have it DARK as shit to near edgyness and make all the fights brutal. Make it so that the 'Undead' are actually undead and the reason they survive being smashed by giants and dragons is because they are effectively unrotting dead who heal by Estus, which are effectively warmth powered potion pots which is why they recharge at bonfires.
Have enemy Undead characters act like Clem from Overlord and just be insane because of the hollowing with varying degrees of assholeness like Lautrec being a crafty cunt after the Firekeepers Soul or Logan progressively going more insane as he 'fulfills' his lust for knowledge.
Animated by Madhouse or Studio 4.c with the same style as the old Berserk anime as well. No CGI though.
Make it a thing that the Chosen undead doesn't die though. Slight premonition based dreams to account for the 'respawn' mechanic and gathering souls is purely because passively, it makes undead stronger and at the end, they are forced to fight one another for ONE to go to the Kiln of the First Flame to face Gwyn. Entire plot turns out to be a lie since Gwyn is a massive pussy and all burnt out and no match for the main character. Ends on a cliff hanger with both Kaathe and Frampt trying to get the Chosen Undead to make a choice. Link the flames or let the world go into Darkness?

I agree with most of it, but I would keep they dying mechanic. Give it a Edge of Tomorrow type feel where you see the Undead get rolled by a mob of enemies, then cut to him going back and doing better but still dying, then to him finally beating the mob with incredible efficiency only to be cut in half 3 seconds later in the next "area".
Very short episodes with a balanced mixture of great combat and landscape pornography. Combat is either encounters with your standard Hollows or tense duels between an invader and host.
Dialogue between characters that aren't trying to gut each other is very sparse but carries a lot of weight. Think the way Navlaan talks to you or even that promo comic where a Faraam Knight Cursed One speaks briefly with Mild-Mannered Pate.

A BB prequel series highlighting the formation of Byrgenwerth and Willem's investigation into insight.
Explore the relationship between Willem and Laurence, and how the discoveries of/in the chalice dungeons change their ideologies.
Show the inevitable break between the two, including the formation and rise of the Healing Church. Include the creation of the Hunter's Workshop and its subsequent fall.
Maybe find a way to cover the events of the Old Hunters DLC.

Make it a comedy show about the npcs inside the game killing off players, making jokes about it and getting into random trouble and fun when no one is in their zones or the game is off.

It needs to be a story of multiple characters going through the world at different times from different places and maybe they meet up or not.....the chosen undead is there doing his own thing and generally ignoring/teaming up for a fight/fighting against them while they create their own story in the souls universe. Each main character's story is a different genre and when characters meet up it becomes a mix.
