I honestly couldn't get into Doom Patrol. Does it get a lot DEEPER and WEIRDER in later arcs? Have I just been overhyped on how DEEP and WEIRD it is?

I don't think so. The mood of Doom Patrol under Morrison is way off from anything in X-Men outside of maybe some New Mutants earlyish stuff like Legion.
I think the Jack arc or Brotherhood of Dada arc are the most adaptable and I don't think anyone would look at them and thing "Oh, it's like X-Men".
