I just started watching this show a week ago and im in the middle of season 2. Does it get any better? Im not talking shit about the show i know alot of people like but i think its mediocre. The only character i like is Grunkle Stan. Mabel is too LOLSORANDUMXDD. Dipper is generic. Soos is the worst character i've ever seen in a show dudes. Wendy is boring love interest #24532. The only laugh out loud moment was when Stan was puncing the Pterydactl in the face. Best episode was the 2D girls vs 3D girls episode.

The blonde girl is named Pacifica Northwest and she is in about 15 episodes, I think, though sometimes just in the background. She has a few focus episodes, I want to say half a dozen or so?
She and Mabel have a rivalry and one big "ship launching" episode, Golf War. Her other big episode, Northwest Mansion Mystery, led to lots of Dipper shipping, but I'll tell you now nothing becomes canon, really for any ships from the show. So you can so what you like.
Despite NMM, the pairing of Mabel/Pacifica, which is called Mabifica, is maybe the second most popular pairing for the fandom by sheer content, and there is a lot of fan art for it, including fan art still being made although the show is over.
I'm a /u/ser and started watching partly (teeny tiny part though) for Mabifica, while it is definitely not worth watching for any /u/ alone since there isn't any, I like the ship and am not disappointed with what I got from it. I knew there was nothing really but if you know that you should be fine. I like rival ships so yuri rival is great for me. Also Pacifica starts out a shallow stereotype but becomes much more interesting in the second season.

Did anyone like GF right off the back because of the premise? I spent a ton of my childhood in a north woods of the Midwestern United states (my relatives have a lot of lake houses in Minnesota), along with going on a few trips as a kid to some nat parks in Montana, and even going to Oregon the summer GF premiered (I was in Mt. Hood, just above GF on the map from the first episode).

No, you should watch it, you just need to keep your expectations um "manageable," it's a cute cartoon with Simpsons style humor, it's not a mold breaker like Batman: The Animated Series or Avatar: the Last Airbender.
Basically, don't take it seriously and you'll be fine.
That said, someone watching it could skip all the Season 1 episodes expect the first one and last two and for Season 2 you could skip s2 eps 1, 5, 6, 9, 13, 14, and 16 if you are only watching it for plot (though one of those is my favorite episode so).

To be fair, the point of that episode was more to give us an idea of who Ford is as a person outside of just The Author (even if it arguably wasn't entirely successful to due to a lack of development in later episodes) but it did also kick off the plot regarding the Rift and Ford putting himself between Dipper and the rest of the Pines family.
Roadside Attraction was a waste of screen time though.
The disappointment here is overblown, and I say that as someone who was disappointed. The hiatuses made the hype too high to ever reach. It does feel like it ended early, probably a season early. But at least it more or less tied things up and there was some fun to be had along the way. For a children's cartoon it was quite good really.
Along with the Manzi drama I sometimes wonder how much Alex visiting this very site contributed to his stress. Probably not much, but you can't take 4chan to heart because it is a vicious place. I don't know if it's true but some people claimed he was visiting here a lot for a while. Not the place to get feedback on your work.

When I first started watching this show I didn't like Mabel; I thought the writers were trying too hard to make her seem cute. But she slowly grew on me, and by the second season was my favorite character.
To answer your question about why people like this show, I liked it because the characters were great, the backgrounds and (for the most part) the character designs were great, it had some of the funniest jokes I'd ever heard or seen on a children's show, and they really had us believe that anything could happen.

Most of the disappointment that people are talking about is limited to season 2B. Not What He Seems, which was what the prior three-quarters of the show had been building up to really couldn't have been more satisfying in my opinion. They call it Zero Gravity and it's sort of related to the swap idea you see a lot where Bill is a tourist kid while Dipper and Mabel are the demons; in this one Will (Reverse Falls Bill) is the co-protagonist twin. But what's really impressive about it is that they made elaborate demon designs/drawings for pretty much every single goddamn character. The pictures and designs are pretty good, too.
