The original Lee/Kirby run is the be-all end-all must read. It's some of the best stuff from silver age Marvel and even now remains one of the best runs.
After that, Byrne's run, Waid's run, and Hickman's run are the go-tos. Ultimate Fantastic Four is worth reading the Millar and Ellis runs, but starts to go down in quality after that.
Morrison's F4 mini was also pretty good.

Don't listen to the fanboys telling you to read Morrison's mini. It was HORRIBLE. The only other FF books even worth mentioning are The Fantastic Four Roast, and maybe the X-Men crossover mini.

Read all of it. It's all a cohesive story. Until #322. Then you can skip to Waid's run and rest the rest.

It's everything that Jack Kirby loved about the medium condensed and concentrated into a four-color science fiction fantasy adventure. I may not be the biggest FF fan (more of a Captain America cumswiller), but I do appreciate the love and care that went into Marvel's First Family

I loved the departure from can-do-no-wrong Bryne Doom and the fallout of trying and failing to fix Latveria.
Unthinkable: Doom killing his girlfriend to get power was fucking BULLSHIT. He used to have morals. It was a hack move from a hack writer and Millar only made it worse with his "Master of Doom" arc. Doom got destroyed by recent writers. Him becoming "good" in Robinson's arc was way more in-character.
