They are not replacing classic Thor with Ultimate Thor. With Jane Foster having the classic Mjolnir, now they have made the classic Thor to inherit the Ultimate Mjolnir from the Ultimate Universe. We saw it at the end of Secret Wars.

616 Foolkiller had a miniseries back in 1991 or so that's probably one of the best Marvel has ever published. It handles deconstruction on a level next to 80s DC, which is an achievement in itself.
