first seasons are just self aware Sitcom tropes, and a collection of ideas that are only funny for 2 minutes (evil genius Stewie played serious isn't interesting as a recurring gag, it runs out of steam quickly.)
post cancellation the writers are just fully aware it's the random cutaway humor that people remembered. then a few seasosn later boredom starts trying to flesh out characters more, then they get bored again and it just becomes south park style 'push the line so we know where it is.'
The early seasons just don't hold up in anyway. he wasn't really lovable, he was just less outright idiot of convenience that later peter became.
it's the reverse of what happened with American Dad. Both have meh beginnings, but while AmDad finds in fleshing out it's characters the characters can now entirely drive and justify episode plots, Family guys characters we're just kind of flat and the amount of work need to evolve them into workable characters isn't really viable for Family Guy given it's audience expectations.

One of the examples of how the humor devolved is the overall treatment of Meg as a character.
She went from awkward teenage girl to punching bag. Old jokes were teenage girl cliches and situations but now the show portrays her as this gross monster but then contradicts itself by insinuating she fucks lots of guys.
It becomes satire during a joke where Meg enters a coma and Peter remarks on how he should have been nicer to her.
