Probably just nostalgia, but I watched the hell out of it as a kid, and I still like it today. Not that I think it holds up or anything, it's pretty garbage, but I do unironically enjoy it.
If nothing else, the theme song and opening sequence are great, and it's even more of a banger in German.

I kinda like the Zelda cartoon cuz it felt like a parody of the "save the princess" trope, like what would really happen after the adventure where the hero slays the great evil and gets the girl. Now you just got this obnoxious horndog Chosen One hanging around the castle with no job or whatever, cuz shit, you wouldn't throw the fucking saviour of the kingdom out on the street, and he's wondering why the hell the princess isn't making his sword shoot lasers every single night.
Shit, I'd play a game with this premise.
I used to read Archie comics a lot when I was 11 or so and I was just really excited to find out that they made a show related to it despite standard DiC animation errors, cliched plots and the writers not even trying on the sci-fi explanations

as a german kid, i tell you it was the same as when we or you guys watched any other cartoon from that time. Back then every second cartoon had an amazing intro while the actual show had QUALITY, limited animation and shit writing.

I watched it as a kid so the ytps became 10x funnier. Plus it's hard not to enjoy when you remember that the animators were just goofing around and had a lot of fun making it.
Long John Baldry (Dr. Robotnik) and Scratch, Grounder, and Coconuts' VAs all genuinely got along well too. It's nice.

I like the Zelda cartoon for what it was. It was good cheesy fun, and Link and Zelda had surprisingly good chemistry as a heroic duo and a "will-they-won't-they" couple.
You also have to understand that there was only one Zelda game at the time so they didn't really have a lot of source material to work with.

I kind of miss intros with awesome animation. Because at least we got to see a glimpse of these characters in feature film-tier animation. Now the intros match the animation of the show which ends up just being shit. Or they have no intro at all, which I can only imagine is super boring for a kid.

I want to dislike the show, but when I try I remember the scene where Links chilling in his room reading a book and Ganon's minions burst in from the door and window and go for the Triforce. Except they're idiots so they wind up taking each other out. Link is halfway up, see's them kill one another, give the most self satisfied smile possible, and lays back down.
