Galactus is the machine that our dimension uses to perpetuate itself. Every time the heat death of the universe happens, that universe's Galactus 'dies' and all the energy he has eaten is unleashed in a whole new Big Bang. The last living being from the old universe is caught in the immense gravity of the big bang forming and for a brief moment becomes one with all of it. Then the universe is reborn in the big bang, the new Galactus is born and goes about eating. It is one part natural phenomenon and one part destiny driven genesis cycle.
At the beginning he could go for months without needing to eat, but most of his energy goes into containing itself so as time goes by he needs to eat faster and faster. That is why Galactus is something you fight against when he comes to your home planet, but you don't ever want to kill him. Because in addition to helping to fight against the big bad things like Thanos, Ego, or the annihilation wave, he also means that everything won't just end one day.
Galactus isn't a random dude that got powerful or etc, he is actually a part of the system of reality. He has Authority and can do things like talk to Death, Eternity, and even bring issues to The Living Tribunal if needed. These being view him as a peer.
